The best KALE SALAD ever

"Honestly, this could be the best salad in NYC! Still dreaming of it."
NYC food scene you never disappoint! On my trip to New York City last month I was racing between meetings, photoshoots, coffee dates and teaching NUFit. It was a 24/7 go go go type of trip! I know that might sound crazy to you but I honestly thrive in fast paced/intense environments, I feed off the energy! I am an energy person so I love coming back to NYC just for those magic vibes.
When I am in the city I love to go to all my old favorite eats, NY has the best food. Since my hotel was strategically located in the heart of Tribeca, a familiar stomping ground during my 20's, I was able to enjoy a few old and new offerings in this area. One of my old faves, is an almond milk latte at my favorite coffee shop La Colombe Torrefaction on Church and Canal. Serious perfection in a cup. And one of my new faves, is the "bomb.com" kale salad (with a side of their charred salmon) at Tiny's and the Bar Upstairs on West Broadway. I named it "bomb.com" because it's that good!
I was introduced to Tiny's by my longtime college girlfriend who lives in the area, we caught up about life and how crazy hard living in New York was when you were a broke college kid ... oh the memories! The restaurant's cozy rustic atmosphere mixed with a dozen or so tables, a wood burning fireplace, brick walls with antique vintage wallpaper, and original tin ceilings makes you feel at home. After looking at the menu I quickly ordered the "bomb.com" kale salad with a maple mustard vinaigrette (on the side) and a side of their charred wild salmon. The combination of sweet, tart, savory, nutty, was perfection. The next day I was back ... this time for lunch with Chelsea! We had been working our tails off all week so it was a great "last meal." I think about that salad all the time so wanted to share the "bomb.com" with you!
KALE SALAD WITH MAPLE-MUSTARD VINAIGRETTE
(serves 2-3)
Dressing Ingredients:
1/4 C grade B pure maple syrup
2 Tbsp + 2 tsp apple cider vinegar
1 clove of garlic
1 shallot
1 Tbsp dijon mustard
Sea salt and pepper to taste
1/2 C olive oil
Salad Ingredients:
1/2 bunch of curly kale, washed, de-stemmed and chopped
2-3 carrots grated
1/3 C lightly toasted walnuts, chopped
1 organic apple, thinly sliced
shredded gruyere or parmesan (omit for vegan)
*This salad pairs really nicely with salmon too! So if you need some amazing omega-3's and protein in your life go for it!
