Holiday "Nice-Cream"
Happy Thanksgiving week! I love the holidays because it's time to relax and hang with my friends and family. Thanksgiving is my favorite holiday because the meal is always filled with so many delicious veggies and amazing treats! Since I am a vegetarian, I love to see how people get creative in the kitchen. Being a creative cooker brings so many people together and who knows you might discover a new favorite dish.
During this time of year there are so many treats and sweets around so I wanted to share one of my favorite non-dairy healthy "ice-cream" recipes with you! I promise you won't even know the difference! I am highly lactose intolerant so adding that extra scoop of vanilla ice-cream on my pie is sadly not an option for me.
My "nice-cream" recipe will literally blow your mind and it's something you can eat all year round and not feel guilty about it! I challenge you to try it this Thanksgiving and see what your family thinks! Eating healthy is the future and I encourage you to start now ... who knows you might find that suddenly your whole life changes! :)
Ingredients: 10 frozen bananas, 1/3 cup coconut meat, 1/3 cup Chameleon Mocha Cold-Brew, 1 tsp cinnamon. **Use a food processor (or a high speed blender) to mix everything together.
Directions: Place frozen bananas in blender. Now, add all the remaining ingredients. Mix for about 30-60 seconds until all the ingredients look combined. Make sure to not over blend because you want the "nice-cream" to still have that tick texture like real ice-cream. Once you feel like it is ready start scooping out and placing on that oh so delicious pie! Happy Thanksgiving!! xxx
