No Bake Energy Balls

“NU x Chameleon Cold-Brew”

Messy... but SO worth it!

I am so pumped to share one of my all-time favorite energy boosting/chocolate treats with you! A good friend of mine turned me onto this recipe years ago and I have been making them ever since. As many of you know, this month I have collaborated with my lovely friends at Chameleon Cold-Brew to share with you 4 recipes that involve my favorite cold-brew peeps!

These little balls of energy are a great mid-day "pick me up" because they are packed with super foods such as cocoa powder and chia seeds. Both cocoa powder and chia seeds have amazing health benefits and are high in antioxidants.

So, whip out your blender (or food processor) and start getting energized! These honestly take 5 minutes to make, so don't worry about having any cooking skills! Just have fun and enjoy!

Ingredients: 10-12 medjool dates, 2 tbs raw cacao powder, 1/2 cup Chameleon Cold-Brew, 3 tbs almond butter, 1 tsp chia seeds, 1/3 cup coconut flakes. **Use a food processor (or a high speed blender) to mix everything together.

Directions: Pit the dates first and add into the blender. Now, add all the ingredients except the count flakes. Mix for about 30-60 seconds until all the ingredients look combined. If the mix is too dry, you can also add more cold-brew. Use your hands to scoop out the mix and start rolling the mix into small balls. I like to sprinkle coconut flakes on the plate first and then roll the balls, coating them. Once finished, place in your fridge. ENJOY! xxx
