Summer Corn Salad

Easy and simple

A lot of you guys have been asking me about simple and easy summer recipes, so today I'm sharing it with you! Big shout out to my mom who is a killer cook and passed the love of cooking down to my sister and me. The kitchen was always the place where the whole family congregated, we loved hanging around the counter tops while my mom whipped up delicious food. My sister and I loved helping my mom cut up produce or mix ingredients while my mother spewed knowledge about food and preparation. We were like sponges to water, soaking up every word while admiring my mother's craft.

Ingredients:

1 pint of cherry tomatoes 1 jicama 1 lemon 1 avocado 1 cucumber 2 corn stalks

Directions:

First, start by washing your produce, which would be your cherry tomatoes and cucumber. Once those items are washed, you can husk your corn and wash that too! Make sure to wash the naked corn because those corn strings can be a bummer if you get one of those caught in your teeth while eating your salad. Now that everything is washed and ready, you can begin to cut up your produce and place items into a salad bowl. I like to start with the tomatoes, then slowly move onto the items that need to be peeled. For the produce that needs to be peeled, take a peeler and start peeling back the skin. The peeled items are the jicama and the cucumber. Once peeled, cut into small cubes. Personally, I like my salads a bit chunky but feel free to cut how you like.

Once that's complete, take your corn and a knife and begin shaving pieces off. Make sure you have a steady surface, because the corn can get slippery and I don't want you to cut yourself! Next, move onto the avocado. I like to section the avocado like a grid and then take a spoon and pull out the meat of the avocado. Finally, simply place the avocado chunks on top.

Lastly, cut your lemon in half and squeeze onto the salad! There you have it, a simple and healthy summer salad. Enjoy!

Fourth of July Fruit Kabobs

Easy + Healthy + Fun

First, I want to wish everyone a Happy 4th of July. I am so proud to be an American! To me, the 4th symbolizes the official start of summer … there always seems to be magic fairy dust in the air. It's the time when families are busting out of cities and headed out on vacation with family and friends. The weekend agenda might include backyard BBQs, farmer's markets, sunshine, mountains, wine and fire-pit sessions … all of which I am in favor of!

During this magical time, there is nothing worse than being stuck in a kitchen while your family and friends are outside enjoying Mother Nature. So, I wanted to share one of my favorite summertime fruit kabob recipes for you! All you need to do is hit your favorite local farmer's market and get skewering!

The Formula

Ingredients:

1 pint of blueberries 1 pint of strawberries 1 pint of watermelon Bundle of bananas Bundle of skewer sticks

Directions:

The best recipes are ones that don't take a ton of effort, and yet are still fun and make people feel good! This way everyone is having fun and enjoying time together.

First, make sure to wash all your fruit. After that is complete, section out the fruit into bowls so it is easy to place on the skewer. This is a perfect activity for kids, because it's fun and they can be creative about how they place the fruit on the kabob. Now, start cutting up the strawberries and bananas, but make sure the pieces are thick enough to place on the skewer. I also like leaving a few uncut strawberries, it makes for a beautiful looking kabob! Lastly, start sliding the fruit on the skewer, one by one … there is no one way to do this! Be creative and make them unique!

Summer is flying and I cannot believe it's already Father's Day this weekend. I love celebrating Father's Day because my dad Terry is my hero! My dad and I are very similar ... my mom would say we are 1. VERY stubborn 2. Work horses 3. LOVE people 4. Talk A LOT ... maybe too much 5. LOVE HUSKER FOOTBALL!

Growing up my dad never missed a game, he was "that dad" in the bleachers cheering me on! One of my favorite childhood memories was when my dad would take me to http://www.tcby.com (YUM) after a big game. As we ate our ice-cream we would dissect every play and player, figuring out ways I could out beat my competition! Can you say competitive much??? I am 100% my father's daughter!

One of the greatest lessons my dad taught me was to never give up and work harder than your opponent. He would say, "Natalie, you cannot out beat reps, if you want it bad enough you have to practice." So, for all those SPORTY dad's out there, thank you for giving your daughters the confidence to play hard and most importantly treating us like the boys!

Summer is here!

Welcome to the first-ever NUFit x Coveteur fitness challenge. It's time to have fun and up our summer workout game, and I'm hoping you are going to squat along with me for the next 30 days, too. It’ll be over before you (and I) know it, and we will all be better for it. I will be cheering you on and sweating with you so, together let's do this!

The NUFit program consists of 6 toning moves paired with 4 weekly cardio ‘burn out’ moves. Each day you will be given 2 specific toning moves with one cardio burn-out move. Throughout the program you will also have 9 special cardio burn 2.0 days. These days are solely focused on cardio, leaving you feeling energized and ready to conquer the day.

And, remember athletes, to always make sure your form is correct before going full out. The foundation has to be solid before the walls of the house can be built.

  During the course of each day you will complete 2 tone moves followed by that week’s cardio ‘burn out’ move. On the days marked Cardio Burn 2.0 it’s a cardio only day. Have fun on those Cardio Burn 2.0 days and let it rip! I want your heart rate up during this section and sweat dripping.

#JONAS take the wheel

Winter Storm Jonas got nothing on us!

We came, we slayed and we conquered!

I LOVE NY but ... I am still trying to forgive mother nature for enveloping winter storm JONAS on us for our "Body Peace" weekend takeover at Refinery Hotel. Despite the two feet of snow and 20+ mph winds, nothing could hold the NUFit'letes down.

I was so happy to see so many familiar faces and I could instantly feel SQUAD NUFit was ready to rock! It was such a magical moment realizing the power of movement. People came from all over the city despite the city wide travel ban and the crazy wintry conditions. Nothing was going to hold us back! The biggest take away for me was that NO matter what, people want to FEEL something ... ENERGY doesn't lie and when you have the ability to influence people on a mass scale do it!

One of the best things about the wellness industry are the amazing women in it! Every day I pinch myself and feel so honored to be able to hang with such incredible industry shaping/changing women. It was such a joy sitting on a panel with Nutritionist Keri Glassman, Yogi Caley Alyssa, Editor and Chief of Yahoo Health Michele Promaulayko, Psychotherapist Terri Cole and the lovely owners of Wellthily Jen Batchelor and Suzie Baleson.

A common thread that unifies us all is the endless LOVE for our passions. We LOVE what we do. Once you find what makes you tick, hold onto that and make it happen. Also, happiness is an inside job, once you mastered that, your whole world will change. Movement is my passion and I did whatever it took to make my dreams my reality. I said YES to every job that came my way and I was always prepared! I did things no other girl would do ... it didn't matter because I WAS HUNGRY! Today, I can honestly say I still have that same fire and hunger because I LOVE what I do ... I actually might have more! Lastly, center yourself around people who care as much as you do and let your talent shine!

HUMMUS

When in doubt ... dip it in hummus!

There's nothing like good old homemade hummus ...

I could eat hummus on everything! It's really the best topping for so many things. The best part about this recipe is that it's so easy and takes no time to make. Store bought hummus can be loaded with salt and other unwanted preservatives that often leaves you feeling crappy. So why not make your own right? Eating healthy starts in your own kitchen. The best way to be in control of what goes in your mouth is by simply making your own food. That way you can really understand what foods are making you feel sluggish and which foods are making you feel like a rockstar! Everyone's body is different so make sure you are listening to your gut, not someone else's.

Basic Hummus

Ingredients: 2 cans of unsalted garbanzo beans (chickpeas) 1 lemon 1 garlic clove finely chopped Dash of pepper Handful of thyme Drizzle of olive oil

Directions: Start by placing your garbanzo beans in your food processor. I like to rinse my beans before I put them into the food processor just to make sure they are super clean. Then cut your garlic into small finely chopped pieces and place into the machine. Squeeze 1 whole lemon over the top and sprinkle both the thyme and pepper in. Also, if you want it to have a creamier texture, add a little bit of olive oil.

Press play on your food processor and let the magic begin. I tend to like my hummus and little chunky so I blend to the point where there is still a chunky texture. It's up to you though, so don't be afraid to play with the texture.
